Recycling education and recycling programs in our schools are some of the most important things we can do to help the recycling movement. As such, Keep Georgia Beautiful has put together a great packet as a guide to recycling in schools. You can download it here. Its packed with good information as well as useful outside resources.
Also try the Environmental Education in Georgia website and the U.S. Green Building Council's High Performance & Healthy Schools Program. It has a lot of good resources, including statistics for current programs, school listings, calendar events, and newsletters.
